Our kids love Tacos. It's a frequent go-to meal and is often requested for celebrations or special occasions. I love it because it's easy to prepare and also allows me to easily sneak in some extra veg to the meal that the kids don't even notice. While I am a big advocate of NOT hiding your veg, it certainly comes in handy at times.
Here's how we do our taco mince:
500g lean mince - any kind works but we like beef or pork
1 brown onion
1 carrot, roughly chopped (I don't bother peeling)
1 zucchini, roughly chopped
Handful of mushrooms
2 teaspoons cumin
1 clove garlic
1 tablespoon tomato paste
1/2 cup water
If you have a food processor, now is the time to use it. Simply pop in the onion, carrot, zucchini, capsicum and mushrooms and process for a few seconds until they are roughly the consistency of grating. Alternatively, finely chop the onion, mushrooms and capsicum and grate the carrot and zucchini.
Brown the onion and mince in a frypan over a medium heat.
